Passion fruit with ice cream

Three ingredients: three flavours that together become something more.

• Ice cream
• passion fruit
• passion fruit caramel sauce

Instructions

1. Grease a tin, approx. 15x20 cm. Line the bottom with baking parchment.
2. Boil cream, sugar and butter in a heavy-bottomed saucepan, stirring until it reaches 125 °C.
3. Stir in liquorice and salmiak. Boil for another 2 minutes.
4. Pour into the tin. Sprinkle with sea salt flakes. Leave to set for at least 2 hours.
5. Cut into pieces with a warm knife.
