A summery berry dessert with liquorice flavours, served in elegant glasses. This is our classic dessert, beloved by many.
White chocolate cream
- 2 dl crème fraîche
- 30 g white chocolate
- 1 tsp liquorice powder
- salt to taste
Strawberry compote
- 1 litre strawberries
- ½–1 dl sugar
- 1–2 tbsp Pernod or pastis
Other
- 4 slices sponge cake
- 4 dl mixed fresh berries (strawberries, raspberries, blueberries, lingonberries)
- 2 tbsp blackcurrant jam
- Salmiak caramel sauce and liquorice powder for garnish
Instructions
- Gently melt the white chocolate over a double boiler.
- Mix in the crème fraîche and season with liquorice powder and salt.
- Mix the strawberries with sugar, bring to a boil and let simmer briefly. Add Pernod.
- Cut the sponge cake into cubes and crush the raw liquorice.
- Layer cream, cake, compote, liquorice, berries and sauce in small glasses.
- Drizzle liquorice sauce between each layer.
- Garnish just before serving.
